They are not particularly interested in the water parks...
Magic Kingdom goes without saying, but which other Parks would you recommend??

Well a definite number two for me would be Disney's Hollywood Studios. You've got loads of new stuff there with Toy Story Mania opened only in May. This would probably follow with Epcot as number three, although the World Showcase can be a hardsell for some young uns. I'd definitely get yourself an ADR down at Epcot and stay for the IllumiNations fireworks.

I'm assuming your kids can probably ride most things but here's a guide for ride heights anyhow.

I think I agree with spondishy, but checking one thing: do you mean three parks, or three days? The reason I am asking is that doing Magic Kingdom properly, with breaks for sanity, takes two days, even if the off-season. If it's three days, I'd spend 2 in MK and one in the Studios.

I'm allowing a day for each park.. Was considering Magic Kingdom, MGM & Animal Kingdom, however we may just wait until we get over there & see how we feel. i.e we may only have 1 day at Universal studios instead of the planned 2... decisions decisions.... only 8 days to go woooo hoooo

Charlie--taking a look at the Disney World sample itineraries on this page: Walt Disney World Easter/Summer Itinerary may help you sort through what to do...as may the ranking of Disney rides and attractions on this page: Comprehensive Guide to Walt Disney World Rides and Attractions

    Have a great trip!! Dave
