The water parks definitely do EMH but its dependant on the season so you'll need to check before you arrive at the WP.
For example, in August:
Blizzard Beach opened at 08:00 on August 4, 11, 18, 25
Typhoon Lagoon opened at 08:00 on August 3, 10, 17, 24, 31
No EMH in September. Hope that helps.
